Microorganisms have been in the life of man since time immemorial. Over time we have learned to live with them, having a positive or negative effect on aspects such as health, food, the environment, among others. From the technological point of view, microorganisms are transcendental to several areas of knowledge, such as biology, medicine, engineering, economics, etc. In all these areas, advances in biotechnology are crucial, not only to understand the behavior of microorganisms, but also to manipulate them and be able to develop different products or satisfy different needs that humanity has.
